A couple of days ago upon entering a health food store to purchase some gluten free, dairy free, sugar free, all natural, organic triple chocolate ice cream (just kidding), we were offered to try some carob-coated cherry bites (organic, no added sugar – for real this time). And they were absolutely delicious. But it got us curious about carob, what it is, and how it compares nutritionally to chocolate. Could it be that carob is the delightfully healthy sibling of chocolate and will forever enable us to eat healthy treats…?

Tomato-chilli relish

This is an award winning relish created by the mother of one of the Project UNITED team members. By “award winning” we mean it should win an award, and by “created” we mean probably acquired from someone else. Regardless, it is top-shelf.

We suggest starting with a well ventilated kitchen. The atmosphere will get spicy very quickly.

Tomato-chilli relish ingredients:

  • 12 finely diced long chillies (we use red and green cayenne chillies)
  • 6 finely diced tomatoes (regular round red tomatoes will do nicely)
  • 3 diced garlic cloves
  • 2 finely diced onions
  • ¾ cup of pineapple juice
  • A splash of Worcestershire

Maple Strawberry Chia Seed Pudding

Everyone loves a treat, but finding one that is made from natural, healthy ingredients that actually taste like a treat can be tricky. But we came up with a beauty!

Ingredients

  • 1 cup almond milk
  • 1 cup plain natural yoghurt
  • 3 tablespoons pure maple syrup
  • 1 teaspoon natural vanilla extract
  • Pinch of Himalayan salt
  • ¼ cup chia seeds
  • ¼ cup sliced almonds, toasted
  • 1 container of strawberries washed and chopped

Method

  1. In a medium bowl whisk together the almond milk, yoghurt, maple syrup, vanilla, and salt until combined.
  2. Whisk in chia seeds and let stand for 30 minutes at room

Coconut seems to be one of those mysterious dietary items that at one point was just minding its own business, and then WHAM! It’s the greatest source of magnificence in the history of the world. Milk, water, oil, cream, desiccated, chunks, whole. If you aren’t on it you should be, and if you are, double it. Out of nowhere it has become one of the most talked about dietary items on the planet. As was the case with our cacao article, we heard “super-food” and thought “could be marketing cheekiness”. Paleo Coconut Ice Cream

There are three things you never discuss at a dinner party: politics, religion, and paleo. But in this case, our paleo ice cream will make the dinner party, so shout it from the rooftops!

Ingredients

  • 1 can of full-fat coconut milk
  • 2 eggs (for a richer flavour, double the eggs but only use the yolks)
  • Vanilla: 3 – 4 tablespoons of real vanilla extract or seeds from two vanilla beans
